Fire and weather. Myth and memory.

Flowing lava and deep sea, family memories and folk tradition meet in two dishes with which chef Accursio Craparo journeys across Sicily and its volcanoes.

With 'L'Arancino si chiude a riccio' ('Arancino clams up') he evokes the Ferdinandea Island, which emerged from the sea in 1831 and sank again a few months later; the origin of legendary stories and the richest coral reef in the Mediterranean.

And with 'Carciofo alla brace' ('grilled artichoke') he depicts the fragrant and wild atmosphere of the Mount Etna volcano in autumn. Spicy, smokey and iodised elements render the complexity of a landscape in both dishes, a landscape in which fire and water continually call to each other.
